Dhaba

For Dhaba, a restaurant formula in Copenhagen, we built a food truck with an outdoor kitchen that brings back the concept of street food to its roots: cooking in the streets.

Originally a “dhaba” is an informal Indian roadside restaurant serving authentic, local dishes. That is exactly what we created for Dhaba: an mobile outdoor kitchen where food is being cooked on the street in an informal, up-close setting, just like in an authentic dhaba

A large robata grill and a special tandoori oven are the heart of this food truck concept. At the end of the day, the entire outdoor kitchen can be loaded into the truck for easy transportation.
